Silent Nightcap

Made with homemade Earl Grey simple syrup, bright lemon juice, botanical gin, and silky egg white, this cocktail is as luxurious as it sounds.

Ingredients
  

Earl Grey Simple Syrup

  • 1 cup Water
  • 1 cup Honey
  • 4 bags Earl Grey Tea
  • 1 Vanilla bean (or tsp vanilla)

Silent Night Cocktail

  • oz gin (a floral or citrus-forward gin works best)
  • 1 oz Earl Grey simple syrup
  • ½ oz fresh lemon juice
  • 1 oz egg white

Instructions
 

Earl Grey Simple Syrup

  • In a small saucepan, combine 1 cup water and 1 cup honey. Bring to a simmer over high heat, stirring until the sugar is fully dissolved.
  • Remove from heat and add 4 Earl Grey tea bags and vanilla bean. Cover and let steep for 20 to 30 minutes.
  • Discard tea bags and let the syrup cool completely before using. Store in the refrigerator for up to 2 weeks.

Silent Night Cocktail

  • In a cocktail shaker, combine gin, simple, lemon, and egg white.
  • Dry shake (without ice) vigorously for 10–15 seconds to emulsify the egg white.
  • Add ice, seal the shaker, and shake again until chilled.
  • Pour into a chilled coupe glass and garnish with a twist of lemon or a sprinkle of nutmeg.
