Remove from heat and add 4 Earl Grey tea bags and vanilla bean. Cover and let steep for 20 to 30 minutes.
Discard tea bags and let the syrup cool completely before using. Store in the refrigerator for up to 2 weeks.
Silent Night Cocktail
In a cocktail shaker, combine gin, simple, lemon, and egg white.
Dry shake (without ice) vigorously for 10–15 seconds to emulsify the egg white.
Add ice, seal the shaker, and shake again until chilled.
Pour into a chilled coupe glass and garnish with a twist of lemon or a sprinkle of nutmeg.
