No fruit salad, no grenadine—just a perfectly balanced classic that proves why the Mai Tai became a tiki legend in the first place.

- 1 oz Rhum Agricole Blanc (Clement Agricole Blanc) 1.5 oz if made "strong"
- 1 oz Dark Jamaican Rum (Ron Zacapa Centenario Negra) 1.5 oz if made "strong"
- 1 oz Fresh Lime Juice
- ½ oz Orange Curaçao Liqueur (Pierre Ferrand Dry)
- ½ oz Orgeat
- ¼ oz Demerara Simple Syrup
- Garnish: Lime wheel and mint or pineapple leaf
Mix blanc rhum, Curaçao, lime juice, Orgeat, and simple. Pour over crushed or nugget ice.
Gently float the dark rum on top.
Garnish with a lime wheel and mine or a pineapple leaf.
