Mai Tai

If you’ve only ever had a Mai Tai loaded with pineapple juice, orange juice, or grenadine, this is your gentle but firm correction. The original Trader Vic’s Mai Tai is a spirit-forward tiki classic that puts great rum front and center, no fruit salad required.

This is Michael’s favorite cocktail, and for good reason. When made correctly, a Mai Tai is citrusy, nutty, and layered with rich rum flavor. It’s balanced, complex, and proof that tiki cocktails don’t need to be overly sweet to be fun. Just fresh lime, quality rum, and a few supporting players doing their job.

Floating Dark Rum on a Mai Tai

Use a bar spoon — Hold a bar spoon (or teaspoon) upside down just above the drink’s surface.

Slow pour — Gently pour the dark rum over the back of the spoon. This slows the pour and helps the rum float on top instead of mixing in.

Let it settle — The dark rum should rest in a visible layer on top, giving that classic “sunset” effect.

Bonus: Get some cool tiki glasses.

Light Rum (Rhum Agricole)

For the base, reach for a Rhum Agricole—a rum made from fresh sugarcane juice, typically from Martinique. It brings a funky, vegetal brightness and dry backbone to the drink. If you can’t find agricole, use a high-quality light or gold rum with a clean finish, but the drink won’t have the same depth.

Dark Rum (Float)

The dark rum is floated on top and brings rich molasses, caramel, and spice notes. You want something full-bodied that will stand out without overwhelming. Avoid overly sweet or flavored rums—look for something with depth and complexity that enhances the orgeat and lime.

Using two different rums gives the Mai Tai its signature layered profile.

Ingredients
  

  • 1 oz Rhum Agricole Blanc (Clement Agricole Blanc) 1.5 oz if made "strong"
  • 1 oz Dark Jamaican Rum (Ron Zacapa Centenario Negra) 1.5 oz if made "strong"
  • 1 oz Fresh Lime Juice
  • ½ oz Orange Curaçao Liqueur (Pierre Ferrand Dry)
  • ½ oz Orgeat
  • ¼ oz Demerara Simple Syrup
  • Garnish: Lime wheel and mint or pineapple leaf

Instructions
 

  • Mix blanc rhum, Curaçao, lime juice, Orgeat, and simple. Pour over crushed or nugget ice.
  • Gently float the dark rum on top.
  • Garnish with a lime wheel and mine or a pineapple leaf.
