Watermelon Mojito

Summer in a glass – this twist on the classic Mojito is refreshing in the heat. The sweet watermelon plays well with the mint and lime flavors, reducing the need for sugar. With only a few ingredients, this cocktail can be batch made as long as you save the club soda for serving. I have found if I let mint soak for a day in the watermelon mojito mix it gives a more minty flavor.

Cocktail Garnishes

Fresh Mint – Fresh mint not only gives this pink drink afresh look. The smell of the mint reinforces the flavor in the cocktail as smell is part of taste. I strain the mint leaves from the cocktail and add the sprig, but some do not strain.

Lime Wedge – A classic lime wedge is always a great choice allowing people to amp up the tart flavor. Remember to set aside some wedges before making the cocktail.

What is a light rum vs dark rum?

Simply put, light rum is clear in color and has a sweeter flavor than dark. Dark rums get their color from the aging process which also provides a more complex flavor. Light rums are typically the ones used in cocktails and come in flavors. For this Watermelon Mojito cocktail I used a Brazilian rum called cachaça for it’s sweet and floral profile.

This Watermelon Mojito is a twist on the classic Mojito – refreshing with the sweet watermelon, tart lime, and refreshing mint.

Equipment

  • Cocktail Shaker

Ingredients
  

  • 1 oz Mint Simple Syrup
  • 1 oz Lime Juice fresh squeezed
  • 2 oz Watermelon Juice
  • 2 oz Light rum
  • Club Soda to fill
  • Mint sprigs to garnish
  • Crushed ice

Instructions
 

  • Fill shaker with ice and pour in Simple Syrup, Lime, Watermelon Juice, and Rum. Shake well for ~10 seconds
  • Strain into a glass of crushed ice
  • Fill with club soda
  • Garnish with mint or lime wedges
