What’s better than a margarita on a hot summer day? A margarita that decided to get a little greener.
The Grass Clippings Cocktail is bright, citrusy, and unapologetically refreshing, with cucumber juice, lime, and a generous hit of cilantro. It’s cooling without being boring, herbaceous without tasting like a salad, and has just enough salt to keep everything in check. This is the drink you make when it’s too hot to care and tequila feels like the correct answer.

I first encountered this cocktail on a Norwegian Cruise Line ship sailing around Mexico, it was the perfect thing for the hot sun. This is a remake of that same cocktail with amped up cilantro and cucumber. I use a smoked jalapeno salt on the rim to give it some additional flair.

How to Make Cucumber Juice
This cocktail uses fresh cucumber juice. You can buy it at some grocery stores (Whole Foods usually has it), but making it yourself is easy and worth it.
No juicer required.
- Roughly chop your cucumber (baby cucumbers work great)
- Blend until fully liquified
- Strain through a fine mesh sieve or cheesecloth to remove pulp
That’s it. Fresh, bright cucumber juice with zero mystery ingredients.

- 1 Drink Shaker
Ingredients
- 2 oz Silver Tequila
- ½ oz Cointreau
- 2 oz Cucumber juice
- ½ Lime juiced
- 1 oz Simple Syrup
- 3 Sprigs Cilantro
- pinch Salt
Instructions
- If required create cucumber juice by liquifying cucumber in a blender and straining the pulp out.
- Fill cocktail shaker with ice then pour in Tequila, Cointreau, Cucumber Juice, and Simple Syrup, Juice lime into shaker, add sprigs of cilantro and a pinch of salt. Shake vigorously for 30-45 seconds.
- Prepare the rocks glass by adding salt to the rim and filling with ice.
- Double strain over a rocks glass and garnish with lime and cilantro.
