Since the dawn of time there is something magical about meat and flame that draws people together. So when July rolls around I start up the smoker and head to Costco to acquire a needlessly large amount of meat. This BBQ rub seasoning is the cornerstone of my annual Summer BBQ party, it goes into almost everything. So make a big batch, amp up some of the ingredients to your taste and enjoy the explosion of smoky, sweet, and spicy flavor.
“Barbecue may not be the road to world peace, but it’s a start.”
Anthony Bourdain
This BBQ Rub is great for all meats including brisket, chicken, and pork butt. However, I have been known to add some in the potato salad, baked beans and mac to spice things up . Sometimes I use it to season and rim a bloody marry, you can’t really go wrong here. Amp up the heat by adding some additional pepper flakes or a bit more sugar for use on pork. During Christmas I have been known to give this as a gift in cute hinged jars.

Prep Your Meat
Prep: While you can dry rub your meat, I like to rub a pork butt with yellow mustard first. The mustard helps adhere the rub and turn it into a delicious crust. It also helps keep the meat moist in the cooking process.
Smoking: I do not like to babysit a smoker overnight and have developed a smoke, sous vide, smoke method that works really well. You get the best of all worlds with a deep smoky flavor, tender meat, and great crust without having to babysit your smoker for too long. Read more about that here.
After you are done smoking , the perfect pairing for the rub is my Sweet and Smokey BBQ Sauce.
